Avocado Tacos with Beans

This is a wonderful recipe I created today.  I saw reference to a guacamole taco, but I have upgraded it some.  I had a big pot of red kidney beans on the stove and so we added them and a few other ingredients.  You could also add in some pinto beans instead.  I so hope you enjoy my wonderful avocado tacos.



Ingredients: 
  • 1 avocado, peeled and smashed
  • 1 small tomato diced
  • 1 green onion, chopped with green ends
  • 1 teaspoon of hot chili sauce
  • 1/4 cup of Greek Yogurt or Labane (my choice)
  • 1/2 cup of beans (I used red kidney, but pinto would work well also)
  • 2 slices of cheese
  • 4 taco shells,
  • Salt and pepper to taste

Directions:
  1. Place the avocado, tomato, green onion, chili sauce and yogurt in a bowl.  Mix well.  Add in the beans and salt and pepper. Mix well again.
  2. Warm the taco shells in the oven or for 10 seconds in the microwave.  Remove from the oven and place 1/2 piece of cheese in each on the tall side.
  3. Fill the taco shells with the mixture and top with chopped coriander.
  4. Serve with a tall glass of ice tea.

Yummy German Chocolate Macaroons

These cookies are SO delicious and just in time for the holidays! If you love my German chocolate macaroons, then share this recipe with your friends.
Ingredients
  • 5⅓ cups shredded sweetened coconut
  • ¾ cup sugar
  • 6 Tbl flour
  • ½ tsp. salt
  • 5 large egg whites
  • 1 cup chopped toasted pecans


Chocolate Topping
  • 4 ounces sweet chocolate, melted
  • 1 Tbl shortening
Sweetened Condensed milk topping
  • 6 ounces sweetened condensed milk
Directions
  1. Place sweetened condensed milk in a double boiler until slightly thickened (About 45 minutes). Keep warm.
  2. Preheat oven to 350 degrees F.
  3. Line cookie sheet with parchment paper or grease and lightly flour the cookie sheet.
  4. In a large mixing bowl combine coconut, sugar, flour and salt. Toss and mix well. Add egg whites and nuts and mix well.
  5. Using a round tablespoon drop macaroons onto prepared cookie sheet.
  6. Bake at 350 degrees F for 20 to 23 minutes or until golden brown on top. Place on cooling rack.
  7. Melt chocolate with shortening in microwave in 30 second increments, stirring in between each increment until chocolate is melted. Drizzle chocolate over macaroons.
  8. Then Drizzle thickened sweetened condensed milk over the chocolate.

Simply Delicious Cauliflower Fried Rice

This is a wonderful and very healthy recipe.  I saw this on Face Book and I updated it and added some ingredients to make it healthier.   The basic recipe called for cauliflower, peas and carrots and onion.  While that may be ok for a quick video, it is not the true fried rice recipe.  With my updated recipe you will find it is very delicious and still very simple to make.

Ingredients
  • 1 small head of cauliflower, riced (simply cut the florets up and put in a food processor and pulse)
  • 2 green onions
  • 1 cup of peas and carrots (frozen)
  • 1/2 cup of corn (optional)
  • 1 egg
  • Soy sauce and sesame seeds to taste
  • chopped coriander
  • Sliced Cucumbers to garnish with
  • 1.5 tablespoons of virgin olive oil or substitute
  • 1 teaspoon of butter
Directions:
  1. As stated above, place the cauliflower in a food processor and pulse slowly until you get tiny riced like pieces.  It takes only a few minutes to do this.
  2. In a heavy skilled add in the oils and heat.  Then add in the veggies and stir fry.   When the veggies are slightly softened add in the egg on the side and cook the egg.  Scramble the cooked egg in with the veggies. 
  3. Add in the cauliflower and mix together well. Top with soy sauce, salt, pepper and sesame seeds.  Allow the cauliflower to heat well and stir, making sure all the rice is well heated and toasty.
  4. Place in a plate and add the sliced cucumbers on the side.  Salt slightly.  Top with the coriander leaves.  

Note:  I added some sunflower seeds also which gave it the crunchy texture.  I like the veggies al dente, not cooked thru.
