How to Make the Best Brown Rice
Ingredients:
- 3/4 cup brown rice, rinsed well
 - 2 1/2 cups of boiling water
 - Salt and pepper
 
Just put the rice, water and seasonings in a baking dish and cover with foil. Bake in a very hot oven of 450 degrees for 1 hour. Remove the foil and fluff up with a fork slightly.
Vegetable Stew
Ingredients:
- 3/4 pound of green beans, ends snipped off and cut into 2 inch pieces
 - 1 large tomato, cut into small pieces
 - 3 large green onions, sliced
 - 3 cloves of garlic, chopped
 - 1 medium hot green pepper
 - 2 large carrots, cut into long 3 inch pieces
 - 2 large potatoes cut into large chunks
 - 2 cups of chicken broth
 - Salt and pepper
 - 2 tablespoons of virgin olive oil
 
- Place the oil in a large skillet and heat. Add in the chopped green onions and saute slightly. Add in the chopped tomatoes, garlic, green pepper, seasoning and chicken broth.
 - Cook for a few minutes or until the chicken broth comes to a boil. Add in the carrots, potatoes and green beans.
 - Add enough water to cover the stew by a few inches. Bring the pot to a boil and reduce to medium heat. Cover the pan and cook until the green beans are done, but still have a slight crunch to them.
 - Remove most of the liquid except for around 2/3 cup and then add in the rice. Mix well and taste to make sure the vegetables and rice do not need more seasoning.
 - Cook until all the liquid is gone and all the flavors are mixed. Serve with a big dollop of yogurt on the side.
