Don't we all become babies with the first sign of sickness?  As the weather changes, many will come down with influenza or the flu and although I can't say the chicken soup is the cure-all remedy, it sure will help with those aching bones and muscles who need to be soothed.

Homemade Chicken Soup
Ingredients:
  • 4 chicken breasts
  • 5-6 medium carrots, peeled and chopped
  • 4 large stalks celery, cleaned and chopped
  • 2 large onions, chopped
  • 1-2 red bell pepper, chopped
  • 6 garlic cloves, chopped
  • 1 small handful parsley
  • 1/2 cup fresh thyme (1 tablespoon dried)
  • 5-10 bay leaves
  • 1/3 cup fresh oregano (1 tablespoon dried)
  • Salt and pepper to taste
  • 2 large medium green chilies
  • 1-2 Tbsp. fresh grated ginger root
Directions:

  1. In a large stock pot put the chicken breasts in 2 liters of hot water.  Bring the water to boil and when the chicken begins to cook you will see the chicken fat or (skum) as we southerners call it, float to the top.
  2. With a large spoon or even a tea strainer, start removing this skum from the pan.  When you have everything removed, start to add in the other ingredients.
  3. Add in the carrots, celery, bell peppers, onions, green chilies, garlic cloves and ginger.  Bring the pot back to boil and cook for 30 minutes or until the chicken is done.
  4. Remove the chicken from the pot and shred the meat into small pieces. Return to the pot and add in 2 cups of chicken stock, parsley, thyme, salt and pepper.
  5. Cook for another ten minutes and remove from the heat to cool slightly.  Serve the chicken soup in large soup mugs, if you have them.
Note;  If you want to add in some noodles with your soup then consider the tiniest noodles you can find or simply break up some very tiny spaghetti.  You can alternate the vegetables too.  Avoid all corn because of the GMO contents.

Why do we love to eat soup from a mug when we are sick?
